Examples of Self-Organization
There are many many examples of how matter in the universe will organize itself without any intelligent mind bringing it about.
Canyons and Valleys
Are canyons organized or random? They are actually quite organized. If you drop a running water hose at any point in the canyon, it will always flow down to the river. This is true of any spot in the canyon and it didn't just happen by chance to be this way.
Galaxies
In all of space, matter tends to clump into collections of stars known as galaxies. A galaxy is not just a random bunch of stars, but they have definite structure to them. Most of them spiral in a pronounced way, and they have definite denser streaks called arms.
Hurricanes
The atmosphere would be smooth and still if the earth was a cold dark planet away from any source of heat. But the earth has a sun, and that causes the atmosphere to move around and form active patterns.
Living Things
Living organisms are such an obvious example of self-organization it seems unnecessary to mention it. After all, the word 'organism' is based on the root of 'organization'.

Rayleigh-Bénard Convection
One well known example of self-organization is Rayleigh–Bénard convection where structures form spontaneously when a fluid is heated.
Sand Dunes
The wind blowing across a sandy plain does not simply move the sand smoothly from one place to another, but instead tends to pile it up into structures we call dunes.
Sand Ripples
Another thing that organizes itself is the ripples that form in sand. The wind blows the sand of course but why doesn't it just blow smoothly along. Why do ripples form at very regular intervals?
Snowflakes
What creates a snowflake? For a snowflake to form there must be the right conditions. You need air with water in it at the right temperature and pressure such that it is super-saturated, which is the condition for an ice crystal to form.
Stars
Stars started forming about 100 million years after the big bang. At that time space was filled with a lot of lone hydrogen. For some reason that is not well understood, that hydrogen started to clump. The gravitational attraction of those clumps gathered hydrogen together to the point where it ignited and started shining as a star. This organization happened without any external organization.
